Written by Sligo woman Dr Prannie Rhatigan, the tome is filled with more than 150 recipes and photographs, and may find itself in a tussle between the kitchen and the coffee table.

There’s also a section dedicated to desserts using seaweed, including chocolate fudge pudding, banoffi pie, scones and breads.

Chefs such as Richard Corrigan, Rick Stein, Domini Kemp and Noel McMeel have also contributed their own favourite seaweed recipes.
